Tomato Tartar Arancani

With Veeba Tartare Dip

What you need:

  • 1 cup Arborio rice
  • 4 tbsps tomato puree
  • 2-3 tbsps tartar sauce + for serving
  • 2 tbsps olive oil
  • 2 tbsps butter
  • 1 tbsp finely chopped garlic
  • 1 medium onion, finely chopped
  • Dried breadcrumbs for coating
  • Coriander sprig for garnishing
  • Mixed capsicum curls for garnishing


1. To make risotto, heat 1 tbsp olive oil and butter in a deep non-stick pan. Add garlic and onions and sauté till onions turn translucent.
2. Add Arborio rice, mix and sauté well. Add 1 cup water and stir to mix. Add 2 tablespoons tomato puree and mix well.
3. Add 1 cup water, stir to mix and cook till just done. Transfer in a bowl.
4. Take cooked risotto in a bowl. Add remaining tomato puree and mix well. Add tartar sauce and mix well.
5. Divide the mixture into equal portions and shape them into balls. Coat them with breadcrumbs.
6. Heat sufficient oil in a kadai. Deep-fry the balls till golden brown. Drain on absorbent paper.
7. Garnish with coriander sprigs and mixed capsicum curls and serve hot with tartar sauce.
