What you need:

For Stir fried veggies in Peri Peri Sauce
  • 1 tbsp Oil
  • ¼ cup Spring onion
  • ½ cup Carrots (Diced)
  • ½ cup Broccoli (Blanched)
  • ½ cup Sweet corn
  • ½ cup Mixed bell peppers
  • ½ cup Paneer
  • Salt to taste
  • 4 tbsp Veeba Peri Peri Sauce
  • Water as required
  • 2 tbsp Spring onion greens
  For Herbed Brown Rice
  • 1 tsp Olive oil
  • 1 tbsp garlic (chopped)
  • 1 tsp mixed herbs
  • Cooked brown rice (2 cups)
  • 1 tbsp parsley
For Stir fried veggies in Peri Peri Sauce
  • In a pan set on medium flame add oil
  • Add onions & sauté until translucent
  • Add diced carrots, Broccoli, Sweet corn, Mixed bell peppers & sauté for 3-4 minutes
  • season with salt
  • Now add Veeba peri peri sauce. Stir & cook for a minute
  • Add the diced paneer & cook for a minute
  • Add hot water as required to adjust consistency and bring to a boil
  •  Add chopped spring onion greens & give it a stir
For Herbed Brown Rice
  • In a wok set on medium flame add oil
  • Add in the garlic & sauté for 1-2 minutes
  • Add mixed herbs & cooked brown rice
  • Add chopped parsley & give it a stir
  • Stir & cook for 2-3 minutes
  • Garnish stir fried veggies in Peri Peri sauce with chopped chilies & spring onion greens & serve along with herbed brown rice
