Spiced Marinara Bean & Corn Bread Cups

What you need:

  • 8 slices of wholewheat bread
  • 1.4th cup grated cheddar cheese
  • 1/2 cup Rajma (Large Kidney Beans), cooked until soft
  • 1/2 cup steamed Sweetcorn
  • 4 tbsp Veeba Marinara Sauce
  • 1 chopped onion
  • 4 chopped garlic cloves
  • 1 tsp red chili flakes
  • Salt to taste


  • Soak the kidney beans overnight
  • Next morning, cook the beans in pressure cooker with water and salt.
  • Set the beans aside once cooked
  • Saute onion garlic in a pan till the onions turn translucent.
  • Now add rajma, sweet corn, Veeba marinara sauce, salt, chili flakes and pepper powder. Stir till you get a thickened texture.
  • Flatten the bread a little, cut the edges and lay it in a greased muffin tray. Fill the beans mixture and top with grated cheese and jalapenos.
  • Bake in preheated oven at 200 degrees for 10 mins until the bread sides are crisp and cheese has melted.
  • Remove from oven, let it cool and serve
