Tandoori Mayonnaise Paneer Frankie Recipe

For the paneer filling

  • 200 grams paneer cut into cubes
  • 1tbsp Veeba tandoori mayonnaise
  • 1 finely chopped tomato
  • 1 finely chopped onion
  • I finely chopped green chilly
  • 1 tbsp oil
  • 1 tsp cumin seeds
  • 1tsp mustard seeds
  • 1 pinch asafoetida
  • Salt to taste
  • Freshly chopped coriander

For the Frankie

  • 1 cup whole wheat flour
  • Salt to taste
  • Water as per requirement

For the topping

  • Fresh lettuce
  • Classic mayonnaise as needed
  • In a non-stick pan heat the oil and add cumin seeds, mustard seeds and asafoetida.
  • After the seeds begin to crackle add onions and green chillies and sauté for a minute.
  • Next add the tomatoes and sauté till they are cooked.
  • Now add the paneer cubes and mix well. Add salt, Veeba tandoori mayonnaise, coriander and mix well.
  • Cover with a lid and let it cook for a minute.
  • Remove from flame.
  • In a deep bowl mix the wheat flour, salt and oil and mix.
  • Next add water to make into medium soft dough and keep it aside.
  • After 15 minutes take the dough and knead it once more and make small balls.
  • Take 1 ball and roll it into a thin circle using wheat flour to help you roll.
  • Heat a non-stick griddle and put the roti on it and let it cook.
  • Flip the roti and drizzle some oil over it.
  • Then flip the roti once more and drizzle some oil over on this side too.
  • Once cooked from both the sides transfer it to a plate.
  • On the roti place 2 lettuce leaves and over it put the paneer filling.
  • Spread some classic mayonnaise over it and roll the roti tightly.
  • Serve hot.

An easy to make dish it is loved by children as well as elders.
