1 cup sweet corn kernels (frozen or fresh, any variant will do)
2 cups spinach leaves, roughly torn into pieces
1 cup mushroom, diced
1 cup yellow pepper, chopped into small pieces
1 cup red pepper, chopped into small pieces
1 onion, diced
1/2 cup Veeba eggless mayonnaise
1/2 cup grated cheese
2 tbsp cream
1 tsp grated garlic
salt, as per taste
Take the corn kernels in a saucepan, add water and a teaspoon of sugar and boil for 10 minutes.
In a deep bowl, combine the spinach leaves, mushroom, corn, yellow and red peppers and onion and toss well.
For the dressing, lightly blend Veeba eggless mayonnaise, cheese, cream, garlic and salt in a mixer.
Incorporate the dressing into the mixed vegetable bowl and mix well.
Refrigerate for an hour and serve chilled.
This colorful and creamy salad is not only quick and easy to make, but tremendously flavorful. You can even top this salad on toasted bread and enjoy it as a filling meal.
