Paneer Tikka Sandwich

Ingredients

  • 2 slices of multi-grain bread
  • 125 gm cottage cheese (paneer or tofu), cut into cubes
  • 1/2 small onions, finely chopped
  • 1 small capsicum, diced
  • 1 tbsp cooking oil
  • Butter
  • Salt
  • Veeba Tandoori Veginnaise
  • Step 1: Toss the paneer cubes in Veeba Tandoori Veginnaise. Add diced capsicum and chopped onions and mix well. Let this marinade rest for 15 mins.
  • Step 2: Add 1 tbsp oil to a pan. Once the oil gets hot, add the paneer, capsicum, salt and cook on medium heat for a minute. Lower the heat and cook covered.
  • Step 3: Take 2 slices of multi-grain bread and put the paneer filling on one slice, gently even it out and cover with other slice, to make a sandwich.
  • Step 4: Heat grill pan, apply butter on the outer sides of the sandwich and place it on the pan. Grill each side of the sandwich on low-medium heat for 2 mins.
Cut into halves and serve the sandwiches with Veeba’s Mint Veginnaise as a cool dip.

Tandoori Potato Sandwich

Ingredients

  • ½ cup capsicum
  • ½ cup Tomatoes
  • ½ cup onion
  • 1 cup boiled potatoes
  • Salt to taste
  • 3tbsp Veeba Tandoori Veginnaise
  • Coriander (optional)
  • Brown bread
  • Butter
  • Step 1: Toss the capsicum, tomatoes, onions and potatoes in a bowl.
  • Step 2: Fold in 3 dollops on Tandoori Veginnaise and mix it well and garnish with coriander.
  • Step 3: Top the bread with Tandoori Potato Filling and place another slice on top. Apply butter on top and grill it until golden brown.
Serve with Veeba’s Masala Tomato Ketchup and enjoy!
