Pizza Puff

What you need:

For the dough:

  • 2 cups maida
  • 1 tsp baking powder
  • Salt to taste
  • 3 tbsp oil
  • Cold water

For the filling:

  • 2 tsp oil
  • 1 finely chopped garlic clove
  • Half finely chopped onion
  • Half finely chopped capsicum
  • 1 cup carrot, corn and green peas
  • Salt to taste
  • 3 tablespoon water
  • 4 tbsp Veeba pasta and pizza sauce
  • ½ cup mozzarella

Accompaniment: Veeba mint mayonnaise

Method:

  • Take maida in a bowl, add baking powder and salt to taste and mix well
  • Add oil and mix. If it holds shape once pressed, it is good to be kneaded
  • Add cold water and knead a smooth and firm dough
  • Cover with a cloth and let it proof for 1 hour
  • In a pan heat oil and saute garlic, add onion and saute for a minute
  • Now at capsicum and saute
  • Add corn, carrot and green peas and saute for one minute.
  • Add salt to taste and water. Let it reach a smooth consistency.
  • Now add Veeba pasta and pizza sauce, saute and take off the heat.
  • Let it cool completely, this is your filling
  • Take half of the dough and roll into a chapati
  • Cut out a rectangle from the chapati and cut it into 6 rectangles by first cutting half and then dividing the halves into 3 equal parts.
  • Mix the filling with grated mozzarella cheese
  • Now keep the filling onto a rectangular piece and cover with another rectangle.
  • Seal all four sides and make slight impressions with a fork
  • Heat oil in a deep dish to deep fry the puffs
  • Keep the heat setting medium and deep fry until golden brown in color.
  • Serve with Veeba mint mayonnaise
