Paneer Shawarma Bites

What you need:

  • 1 cup whole wheat flour or atta
  • salt to taste
  • water to knead
  • 1 tbsp. vegetable oil/olive oil
  • 2 tsp black sesame seeds
  • 250-gm paneer/ cottage cheese
  • ½ cup hung curd0
  • 2 tbsp. garlic paste
  • 3 tbsp. Veeba harissa sauce
  • Veeba garlic mayonnaise
  • Lettuce leaves
  • Olives for garnish


The entire procedure can be divided into 3 phases viz. making the whole wheat lavash, making the shawarma bites and putting it all together.

Below are the steps for preparing the whole wheat lavash:

  • Take a bowl and knead the whole wheat flour with water and a pinch of salt.
  • Towards the completion of kneading, add oil and knead again.
  • Roll a thin chapati from the dough.
  • Use a cutter or lid or a bowl to cut nearly 1-inch circles from the thin layer.
  • Brush on some oil and sprinkle the sesame seeds over the layer.
  • Bake for 12-15 mins in a pre- heated oven to 180 degrees.
  • The final texture must be crisp and brown.
  • Cool down after removing from oven and do not cover to avoid the lavash from getting soggy.


Below are the steps for preparing Paneer shawarma bites:


  • Cut paneer into 1-1.5 inch cubes
  • Take hung curd in a bowl and add to Veeba Harissa sauce, garlic paste, salt and mix them well.
  • To the mix add the paneer cubes and let them stand for 20-30 mins to soak in the ingredients.
  • Heat oil in a grill pan and grill the paneer for 2 minutes.
  • Once grilled, cut the paneer into smaller pieces.

You can now assemble your preparations for the final dish:

  • Spread Veeba garlic mayonnaise over the whole wheat lavash.
  • Place the lettuce leaves over mayonnaise seasoned lavash.
  • Place paneer pieces and add some more garlic mayonnaise on the top.
  • Garnish with olives and chopped parsley.
  • Serve immediately and relish a sumptuous snack.
