Creamy Cajun Spiced Potatoes

With Eggless Mayonnaise

What you need:

For Cajun spiced potatoes:

  • 200-gram baby potatoes or normal potatoes chopped
  • 1 tsp. corn flour
  • 2 tbsp. vegetable oil or ghee
  • ½ cup Veeba eggless mayonnaise
  • 1 tbsp. red chili powder
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • ½ tsp. finely ground black pepper
  • ½ tsp. finely ground white pepper
  • ½ tsp oregano
  • Salt to taste
  • 1 tbsp. well chopped parsley
  • 3 tbsp. finely chopped onions

Method:

For Cajun spiced potatoes:

  • Peel the potatoes and wash them. Wipe dry with a kitchen towel or absorbent sheet.
  • Take a pot, pour in water and add a pinch of salt. Add the potatoes and boil till they soften. Remove just before they cook completely.
  • Set them aside to cool.
  • Flatten the potatoes slightly by applying pressure with your palm.
  • Sprinkle and coat the potatoes with cornstarch, salt and pepper.
  • Take a pan on stovetop or induction and add vegetable oil or ghee. Keep the heat at medium setting.
  • Toss in the potatoes and fry till the color changes to golden brown and texture to crisp.

 

For Creamy spiced topping:

  • For the creamy Cajun spiced topping, mix Veeba eggless mayonnaise along with the other ingredients in a bowl.

Pour the topping over golden crispy potatoes and garnish with parsley. Yummy Cajun spiced potatoes are ready to relish.
