Tomato-Cheese Chapati Pinwheel Sandwich

Ingredients

  • ½ cup finely chopped green capsicum
  • ½ cup finely chopped red bell peppers
  • 2 tbsp. chopped spring onion
  • 3 tbsp. chopped lettuce
  • Veeba Achari Veginnaise
  • Chappatis
  • Clingfilm
  • Step 1: Add in a bowl ½ cup finely chopped green capsicum and ½ cup finely chopped red bell peppers, then add 2 tbsp. chopped spring onion.
  • Step 2: Fold in 4 tsp of Veeba Achari Veginnaise
  • Step 3: Spread a generous dollop of the mix on a left over chappati, topped with 3 tbsp. chopped lettuce and roll it in.
  • Step 4: Wrap in a cling film and refrigerate for 30 minutes.
  • Step 5: After 30 minutes unwrap and cut into slices, the chapatti pin wheel sandwich is ready.
