Chipotle Southwest Dressing   An international favourite packed with smoky Mexican flavours, this dressing is a special addition to any sandwich.

What you need:

  • 6 large eggs 1/3 cup Veeba Chipotle Southwest Dressing 1/2 cup chopped red & yellow bell peppers Kosher salt and freshly ground black pepper Vegetable oil, for frying 1/2 cup all-purpose flour 1 1/4 cups panko


  • Boil the eggs for 12 minutes, chill in ice bath & remove the shell
  • Now cut into half & remove the yolk,
  • Place the yolks in another bowl & add the Veeba Chipotle Southwest Dressing, salt, black pepper, chopped parsley & mix to a smooth paste, transfer to a piping bag with a star nozzle
  • Now take 3 bowls, in one add flour, in the other whisked eggs & the third one with panko bread crumbs
  • Dip egg whites in flour then egg wash & then coat with panko crumbs
  • Deep fry in oil till crisp
  • Once fried, pipe the egg chipotle mixture into the yolk cavity
  • Serve warm & garnish with peppers & coriander
