Ingredients

  • 200 g paneer (Indian cottage cheese), cut into cubes or strips
  • 2 tbsp Veeba Teriyaki Stir Fry Sauce
  • 4 whole wheat or multigrain wraps or parathas

  • 1 bell pepper, thinly sliced (any color)
  • 1 tbsp oil
  • Salt to taste
  • Fresh coriander leaves for garnish Optional: lettuce leaves, sliced tomatoes, cucumber strips

Directions

Cook the Eggs

Heat a non-stick skillet over medium heat and add a little butter or olive oil. Crack the eggs into the skillet and cook them to your desired doneness. You can fry them sunny-side up, over easy, or scrambled, depending on your preference. Season the eggs with salt and pepper while cooking.

Toast the Bread

While the eggs are cooking, toast the slices of bread until they are golden brown and crispy.

Assemble the Sandwich

Once the eggs are cooked and the bread is toasted, spread Veeba Harissa Dressing generously on one side of each slice of bread.

Add Eggs

Place the cooked eggs on one slice of bread. If you've fried the eggs, you can leave them whole or break the yolks slightly for a runnier texture.

Add Toppings

Layer the optional toppings such as lettuce leaves, sliced tomatoes, sliced cucumbers, or avocado slices on top of the eggs for added flavor and freshness.

Close the Sandwich

Place the other slice of bread with the Harissa Dressing side down on top of the toppings to close the sandwich.

Serve

Cut the Egg & Harissa Sandwich in half diagonally and serve immediately. Enjoy the delicious combination of creamy eggs and spicy harissa dressing sandwiched between crispy, toasted bread.
